5-Ingredient Stuffed Zucchini

1. Preheat oven to 400º.

2. Sauté sausage in a medium pan until browned. Add quinoa, tomatoes, salt and pepper. Remove from heat and add basil.

3. Place zucchini halves onto a baking sheet and brush with olive oil. Spoon mixture evenly into zucchini. Lightly tent with aluminum foil and place in oven.

4. Bake for 20 minutes or until zucchini is fork tender. Remove from oven and serve. Garnish with freshly grated parmesan cheese, if desired.
